Preheat Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

Prepare the Puff Pastry: Roll out the puff pastry sheet on a lightly floured surface to smooth it out. Cut the pastry into strips (about 1 inch wide and 6 inches long).

Layer Ingredients: If using, spread a thin layer of mustard on each strip of puff pastry. Place a slice of ham and a sprinkle of cheese on one end of each strip.

Roll the Sticks: Starting from the ham and cheese end, roll the pastry strip up tightly to form a stick. Place the rolled sticks seam-side down on the prepared baking sheet.

Add Egg Wash: In a small bowl, beat the egg and brush it over the tops of the sticks. If desired, sprinkle sesame seeds or poppy seeds on top for added texture.

Bake: Bake in the preheated oven for 15-20 minutes, or until the sticks are golden brown and puffed.
