🥯 Low-Carb Fathead Rolls (Mediterranean)

🧺 Ingredients

  • 1½ cups shredded mozzarella cheese (full-fat)

  • 2 tbsp cream cheese, softened

  • ¾ cup fine almond flour

  • 1 large egg

  • 1 tbsp extra-virgin olive oil

  • ½ tsp baking powder (gluten-free)

  • ½ tsp sea salt

  • ½ tsp dried oregano or Italian seasoning

Optional Mediterranean Toppings

  • Sesame seeds or black seeds (nigella)

  • Dried rosemary or thyme

  • Crumbled feta (small amount)


👩‍🍳 Instructions

1️⃣ Preheat

  • Preheat oven to 375°F (190°C).

  • Line a baking sheet with parchment paper.


2️⃣ Melt the Cheese

  • In a microwave-safe bowl, combine mozzarella and cream cheese.

  • Microwave 30 seconds at a time, stirring, until smooth and stretchy.


3️⃣ Make the Dough

  • Add almond flour, egg, olive oil, baking powder, salt, and oregano.

  • Mix until a soft dough forms (use a spatula or clean hands).


4️⃣ Shape the Rolls

  • Divide dough into 6 equal portions.

  • Roll into smooth balls and place on the baking sheet.

  • Sprinkle with sesame seeds or herbs if using.


5️⃣ Bake

  • Bake 20–22 minutes, until golden and puffed.

  • Cool slightly before serving.
