1½ cups shredded mozzarella cheese (full-fat)
2 tbsp cream cheese, softened
¾ cup fine almond flour
1 large egg
1 tbsp extra-virgin olive oil
½ tsp baking powder (gluten-free)

½ tsp dried oregano or Italian seasoning

1️⃣ Preheat
Preheat oven to 375°F (190°C).
Line a baking sheet with parchment paper.
2️⃣ Melt the Cheese
In a microwave-safe bowl, combine mozzarella and cream cheese.
Microwave 30 seconds at a time, stirring, until smooth and stretchy.
3️⃣ Make the Dough
Add almond flour, egg, olive oil, baking powder, salt, and oregano.
Mix until a soft dough forms (use a spatula or clean hands).
4️⃣ Shape the Rolls
Divide dough into 6 equal portions.
Roll into smooth balls and place on the baking sheet.
Sprinkle with sesame seeds or herbs if using.
5️⃣ Bake
Bake 20–22 minutes, until golden and puffed.
Cool slightly before serving.
