🌿 3-Ingredient Mediterranean Breakfast Bake (Super Fluffy!)
Ingredients
✔️ 3 large eggs
✔️ 1 cup (240 g) Greek yogurt (plain, thick)
✔️ 3 tbsp semolina or 2 tbsp cornstarch (both work for fluffiness)
(Optional Mediterranean add-ins)
Pinch of salt
A drizzle of olive oil
A little grated cheese (feta or Parmesan)
Herbs like oregano or thyme
👩🍳 Instructions
1. Prepare the mixture
In a bowl, whisk together:
Eggs
Greek yogurt
Semolina (or cornstarch)
Mix until smooth and creamy.
2. Add flavor (optional but recommended)
Stir in:
A pinch of salt
Herbs
A spoon of olive oil
3. Pour into a baking dish
Grease a medium baking dish with a little olive oil or butter.
Pour the mixture in—no need to fill too high, it will rise a lot!
4. Bake
Bake at 180°C (350°F) for 25–30 minutes, until the top is golden and puffed, just like in the photo.
5. Serve
Serve warm with:
Honey
Fresh fruit
Feta and olives
Tomatoes and cucumber
A drizzle of olive oil
