🍪 Mediterranean Breakfast Cookies

🧾 Ingredients

½ cup mashed banana (about 1 large ripe banana)
¾ cup almond butter
⅓ cup honey
1 tsp vanilla extract
2½ cups rolled oats
1 tsp cinnamon
½ tsp baking powder
½ tsp salt
½ cup raisins
½ cup dark chocolate chips
½ cup pepitas (pumpkin seeds)
2 tbsp flax seeds
🍽️ Instructions
1. Preheat Oven
Preheat to 175°C (350°F).
Line a baking sheet with parchment paper.
2. Mix the Wet Ingredients
In a large bowl, whisk together:
Mashed banana
Almond butter
Honey
Vanilla
Stir until creamy and smooth.
3. Add the Dry Ingredients
Add:
Rolled oats
Cinnamon
Baking powder
Salt
Flax seeds
Pepitas
Raisins
Dark chocolate chips
Mix until everything is evenly combined.
The dough should be thick and sticky.
4. Shape the Cookies
Scoop about 2 tablespoons of dough per cookie.
Flatten slightly with your fingertips — these cookies don’t spread.
5. Bake
Bake 12–15 minutes, until lightly golden on the edges.
Let cool completely to firm up.
6. Store
Store in an airtight container up to 5 days, or freeze up to 2 months.
