1. Prep the Potatoes

  1. Preheat oven to 200ยฐC (400ยฐF).

  2. Wash potatoes well; keep the skins on.

  3. Slice into ยผ-inch thick rounds.

  4. Place in a bowl and pat dry with a towel (important for crispiness!).


2. Make the Herb Oil

In a small bowl, mix:

  • Olive oil

  • Garlic

  • Oregano

  • Thyme

  • Paprika

  • Salt & pepper


3. Coat the Potatoes

  • Pour the herb oil over the sliced potatoes.

  • Toss to coat evenly.


4. Arrange & Bake

  1. Line a baking tray with parchment.

  2. Lay potatoes in a single layer (no overlapping).

  3. Bake 35โ€“45 minutes, flipping halfway, until golden and crispy on edges.


5. Add Mediterranean Toppings

While still warm, add any of the following:
