🫒 Mediterranean Cheese & Herb Stuffed Mushrooms

Ingredients

500 g button mushrooms (cleaned, stems removed)

3 tbsp extra virgin olive oil

3 garlic cloves, minced
-
½ cup cream cheese (or ricotta for lighter version)

½ cup shredded mozzarella
-
¼ cup grated Parmesan
-
¼ cup finely chopped spinach or parsley
-
2 tbsp chopped green onions
-
1 tbsp fresh oregano or thyme (or 1 tsp dried)

Salt & black pepper, to taste

Optional: red chili flakes or chopped olives
Instructions

Preheat oven to 190°C (375°F). Lightly grease a baking dish.

Finely chop mushroom stems.

Heat olive oil in a pan, sauté garlic and chopped stems for 3–4 minutes until soft.

Remove from heat and mix with cream cheese, mozzarella, Parmesan, spinach, herbs, salt, and pepper.

Stuff mushroom caps generously with the mixture.

Arrange in baking dish and drizzle lightly with olive oil.

Bake for 18–22 minutes until mushrooms are tender and tops are golden.

Optional: broil for 1–2 minutes for extra browning.
