🥗✨ Mediterranean Crab & Dill Salad (Light & Creamy)

📝 Ingredients

Salad

  • 1 lb imitation crab meat (or real crab if preferred), chopped

  • 2–3 ribs celery, diced

  • 2 tbsp fresh dill, chopped

  • Optional Mediterranean add-ins:

    • 1 tbsp capers

    • ¼ cup chopped cucumbers

    • 1 tbsp lemon zest

Creamy Dressing

  • ½ cup Greek yogurt (Mediterranean twist—light & high protein)

  • 2 tbsp light mayo

  • 1 tbsp extra-virgin olive oil (optional but delicious)

  • 1–2 tbsp fresh lemon juice

  • 1 tsp garlic powder

  • ½ tsp onion powder

  • Salt & black pepper to taste


👩‍🍳 Instructions

1. Prep the Base

  • Chop the imitation crab into bite-size pieces.

  • Dice celery and fresh dill.

2. Make the Dressing

Whisk together:

  • Greek yogurt

  • Light mayo

  • Olive oil (optional)

  • Lemon juice

  • Garlic powder

  • Onion powder

  • Salt & pepper

Mix until smooth.

3. Combine

  • Add the crab, celery, and dill into a mixing bowl.

  • Pour dressing over the top.

  • Toss until evenly coated.

4. Chill

  • Refrigerate at least 30 minutes for best flavor.

  • Swap lemon juice with white wine vinegar for extra brightness.
