🥬 Mediterranean Crispy Cabbage Fritters
Golden, crispy on the outside, soft inside, and bursting with herbs and garlic. Serve with a refreshing yogurt dip!
🌿 Ingredients (Serves 4–6)
For the fritters:
500 g cabbage, finely shredded
2 medium onions, finely chopped
3 garlic cloves, minced
3 eggs
4 tbsp flour (or oat flour for a healthier option)
½ tsp salt (or to taste)
½ tsp black pepper
½ tsp paprika
½ tsp cumin
1 tsp dried oregano
2–3 tbsp fresh parsley or dill, chopped
Oil for pan-frying (olive oil preferred)
For Mediterranean yogurt dip:
1 cup Greek yogurt
1 tbsp lemon juice
1 tbsp olive oil
1 garlic clove, minced
1 tbsp fresh dill or parsley
Pinch paprika or chili flakes
Salt & pepper to taste
👩🍳 Instructions
1. Prepare the Cabbage
Place shredded cabbage in a bowl.
Sprinkle with a little salt and massage for 2–3 minutes until slightly softened.
This helps it cook faster and improves texture.
2. Mix the Batter
In a large mixing bowl:
Add cabbage
Add onions, garlic, and herbs
Add eggs, flour, salt, pepper, paprika, cumin, and oregano
Mix until everything is evenly coated
Batter should be thick and sticky (if too wet, add 1 tbsp more flour)
3. Pan-Fry
Heat olive oil in a skillet over medium heat.
Scoop 1–2 tbsp of batter and flatten gently.
Fry 3–4 minutes per side until golden and crisp.
Place on a paper towel to remove excess oil.
4. Make the Mediterranean Yogurt Dip
Combine Greek yogurt, lemon juice, olive oil, garlic, herbs, salt, and pepper.
Sprinkle with paprika or chili flakes.
5. Serve
Arrange the fritters around the yogurt dip (as shown in the image).
Enjoy hot — they’re crispy outside, tender inside, and incredibly flavorful.
🍽️ Tips
Add grated carrot or zucchini for extra color and nutrition.
For gluten-free: use oat flour or chickpea flour instead of wheat.
For extra crispiness: add 1 tbsp cornmeal or semolina.
For baking: bake at 200°C (400°F) for 20–25 minutes, flipping halfway.
