🍋 Mediterranean Garlic Lemon Herb Chicken
A bright, aromatic chicken dish cooked with olive oil, garlic, herbs, and tomatoes — simple but bursting with flavor.
🌿 Ingredients (Serves 4)
Chicken:
4 boneless, skinless chicken breasts
2 tbsp olive oil
1 tsp salt
½ tsp black pepper
1 tsp paprika
1 tsp dried oregano
½ tsp thyme
½ tsp cumin
4 garlic cloves, minced
Zest of 1 lemon
Juice of 1 lemon
Vegetables (optional but very Mediterranean):
1 cup cherry tomatoes, halved
1 small red onion, sliced
1 bell pepper, sliced
1 tbsp capers or olives (optional)
Finish:
2 tbsp fresh parsley
Extra lemon slices
Optional: crumbled feta on top
👩🍳 Instructions
1. Prep the Chicken
Pat chicken breasts dry.
In a bowl, mix olive oil, salt, pepper, herbs, paprika, garlic, cumin, lemon zest, and lemon juice.
Coat the chicken well.
Marinate 15 minutes (or up to 8 hours if time allows).
2. Sear the Chicken
Heat a large skillet over medium-high heat.
Add a little olive oil.
Sear chicken breasts 4–5 minutes per side until golden.
3. Add Mediterranean Vegetables
Add to the skillet:
Cherry tomatoes
Onion
Bell pepper
Capers or olives
Cook 3–4 minutes until tomatoes soften and release juices.
4. Create the Sauce
Add ¼ cup water or chicken broth to the pan.
Cover and cook 8–10 minutes until chicken is cooked through (internal temp 165°F / 74°C).
The vegetables create a natural Mediterranean-style broth with lemon and herbs.
5. Finish & Serve
Sprinkle fresh parsley, add lemon slices, and top with feta if you like.

💡 Tips
For super juicy chicken: butterfly the breasts or gently pound them to even thickness.
For richer flavor: add 1 tbsp sun-dried tomato oil.
