🧾 Ingredients

6 large eggs

¼ cup milk or unsweetened almond milk

2 tbsp extra-virgin olive oil (for greasing & flavor)

1 cup fresh spinach, finely chopped

3 green onions (spring onions), thinly sliced

¼ cup crumbled feta cheese (optional but very Mediterranean)

2 tbsp grated Parmesan (optional)

¼ tsp dried oregano

Salt & freshly ground black pepper, to taste

Optional add-ins: chopped parsley, dill, mushrooms, bell pepper

Preheat Oven

Preheat to 180°C / 350°F.

Lightly grease a muffin tin with olive oil.

Prepare the Veggies

Evenly distribute spinach and green onions into each muffin cup.

Add feta or other optional vegetables if using.

Whisk the Eggs

In a bowl, whisk eggs, milk, oregano, salt, and pepper until smooth.

Fill the Muffin Cups

Carefully pour the egg mixture over the vegetables, filling each cup about ¾ full.
