🥚🌿 Mediterranean Egg Muffins (Spinach & Green Onion)

🧾 Ingredients

  • 6 large eggs

  • ¼ cup milk or unsweetened almond milk

  • 2 tbsp extra-virgin olive oil (for greasing & flavor)

  • 1 cup fresh spinach, finely chopped

  • 3 green onions (spring onions), thinly sliced

  • ¼ cup crumbled feta cheese (optional but very Mediterranean)

  • 2 tbsp grated Parmesan (optional)

  • ¼ tsp dried oregano

  • Salt & freshly ground black pepper, to taste

  • Optional add-ins: chopped parsley, dill, mushrooms, bell pepper


👩‍🍳 Instructions

  1. Preheat Oven

    • Preheat to 180°C / 350°F.

    • Lightly grease a muffin tin with olive oil.

  2. Prepare the Veggies

    • Evenly distribute spinach and green onions into each muffin cup.

    • Add feta or other optional vegetables if using.

  3. Whisk the Eggs

    • In a bowl, whisk eggs, milk, oregano, salt, and pepper until smooth.

  4. Fill the Muffin Cups

    • Carefully pour the egg mixture over the vegetables, filling each cup about ¾ full.

    • Sprinkle Parmesan on top if desired.

  5. Bake

    • Bake for 18–22 minutes, until puffed, set in the center, and lightly golden.

  6. Cool & Serve

    • Let rest 5 minutes, then gently remove from the pan.
