🥕🥒 Mediterranean Veggie Fritter Sticks

(Crispy Zucchini–Carrot–Green Onion Bites)


🌿 INGREDIENTS

  • 1 medium zucchini, grated

  • 1 medium carrot, grated

  • 2 eggs

  • 3–4 tbsp green onion, finely chopped

  • ½ cup flour (or whole-wheat flour or oat flour)

  • ½ tsp salt

  • ½ tsp black pepper

  • ½ tsp garlic powder (optional)

  • ½ tsp oregano or thyme

  • 2–3 tbsp olive oil (for pan-frying)


🥣 INSTRUCTIONS

1. Prep the Vegetables

  • Grate the zucchini and squeeze out excess water.

  • Grate the carrot.

  • Add both to a bowl.


2. Make the Mixture

Add to the bowl:

  • Eggs

  • Green onions

  • Salt, pepper, herbs

  • Flour

Mix until combined.
Batter should be thick enough to shape — add a little extra flour if needed.


3. Shape

  • Take a small handful of mixture and form finger-shaped sticks or patties.


4. Cook

Heat 1–2 tbsp olive oil in a nonstick pan.
Fry on medium heat:

  • 3–4 minutes per side

  • Until golden, crispy, and cooked through.

Place on paper towel to remove excess oil.


🍽️ SERVE WITH

  • Garlic yogurt dip

  • Tzatziki

  • Hummus

  • Tahini lemon sauce

  • Mediterranean salad
