🥕🥒 Mediterranean Veggie Fritter Sticks
(Crispy Zucchini–Carrot–Green Onion Bites)
🌿 INGREDIENTS

1 medium zucchini, grated

1 medium carrot, grated

2 eggs
-
3–4 tbsp green onion, finely chopped
-
½ cup flour (or whole-wheat flour or oat flour)

½ tsp salt
-
½ tsp black pepper
-
½ tsp garlic powder (optional)
-
½ tsp oregano or thyme
-
2–3 tbsp olive oil (for pan-frying)
🥣 INSTRUCTIONS
1. Prep the Vegetables

Grate the zucchini and squeeze out excess water.

Grate the carrot.

Add both to a bowl.
2. Make the Mixture
Add to the bowl:

Eggs
-
Green onions
-
Salt, pepper, herbs
-
Flour
Mix until combined.
Batter should be thick enough to shape — add a little extra flour if needed.
3. Shape

Take a small handful of mixture and form finger-shaped sticks or patties.
4. Cook
Heat 1–2 tbsp olive oil in a nonstick pan.
Fry on medium heat:

3–4 minutes per side

Until golden, crispy, and cooked through.
Place on paper towel to remove excess oil.
