🧾 Ingredients
For the Potatoes

4 medium potatoes (Yukon gold or red potatoes work best)

3 tbsp olive oil

3 cloves garlic, minced

1/2 tsp paprika

1/2 tsp salt (or to taste)

1/4 tsp black pepper

1/4 cup feta cheese, crumbled

Juice of 1/2 lemon

Cherry tomatoes, halved

A drizzle of extra olive oil
🍽️ Instructions
1. Prep the Potatoes

Preheat oven to 200°C (400°F).

Wash potatoes well; keep the skins on.

Slice into ¼-inch thick rounds.

Place in a bowl and pat dry with a towel (important for crispiness!).
2. Make the Herb Oil
In a small bowl, mix:

Olive oil

Garlic
-
Oregano
-
Thyme
-
Paprika
-
Salt & pepper
3. Coat the Potatoes

Pour the herb oil over the sliced potatoes.

Toss to coat evenly.
4. Arrange & Bake

Line a baking tray with parchment.

Lay potatoes in a single layer (no overlapping).

Bake 35–45 minutes, flipping halfway, until golden and crispy on edges.
5. Add Mediterranean Toppings
While still warm, add any of the following:
✔ Feta
✔ Parsley
✔ Lemon juice
✔ Olives
✔ Cherry tomatoes
✔ Extra olive oil drizzle
🌿 Tips & Variations
Extra Crispy Trick
Bake at 220°C (425°F) for the last 10 minutes.

Slice three-quarters deep and bake whole potatoes with the same herb oil.
