WW Turkey Salad

WW Turkey Salad
  • 18 oz cooked turkey breast shredded
  • 6 tbsp fat free mayonnaise
  • 2 tbsp fat free yogurt
  • 2 tsp mild curry powder
  • 1 tbsp mango chutney
  • 1/2 tsp ground cinnamon
  • 6 dried apricots
  • 1 tsp flaked almonds optional
  • 1 pinch sea salt to taste
  1. Place the shredded turkey in a bowl.
  2. In a separate bowl, mix the mayonnaise, yogurt, curry powder, mango chutney, cinnamon and a pinch of salt to make a smooth dressing.
  3. Dice the dried apricots into small pieces and mix in to the bowl of shredded turkey.
  4. Tip the dressing into the turkey and apricots and stir so that it is all covered with dressing.
  5. Place the salad in the fridge to chill for at least an hour.
  6. Remove from the fridge and top with the sliced almonds if using.
  7. Serve!
