For the Chicken

2 large chicken breasts, sliced into strips

For the Pasta

300g fettuccine
-
2 cups broccoli florets
-
Salt for boiling water
Mediterranean Alfredo Sauce

1 tbsp olive oil
-
2 tbsp butter
-
3–4 garlic cloves, minced
-
1 cup milk OR half-and-half
-
½ cup cream OR Greek yogurt (Mediterranean twist)
-
½–¾ cup grated Parmesan
-
½ tsp oregano
-
½ tsp black pepper
-
Pinch of nutmeg (optional)

½ cup cherry tomatoes (optional, Mediterranean style)
Toppings

A drizzle of olive oil
🍳 Instructions
1. Cook the Pasta & Broccoli

Boil fettuccine according to package instructions.

During the last 2 minutes, add broccoli to the same pot.

Drain and set aside (reserve ½ cup pasta water).
2. Cook the Chicken

Heat olive oil in a skillet.

Add chicken strips, season with paprika, oregano, thyme, salt, pepper, and garlic.

Cook until golden and fully done (5–7 minutes).

Remove chicken and set aside.
3. Make the Mediterranean Alfredo Sauce

In the same pan, add butter + olive oil.
-
Add garlic and cook 30 seconds until fragrant.

Add milk (or half-and-half) and bring to a gentle simmer.

Stir in cream or Greek yogurt.

Add Parmesan, oregano, pepper, and nutmeg.

If too thick, add a splash of pasta water.

Add cherry tomatoes if using — let them soften slightly.
4. Combine Everything

Add cooked pasta + broccoli + chicken into the sauce.

Toss gently until creamy and well-coated.

Adjust with extra pasta water if needed.
