Banana Loaf Recipe
Ingredients:
- 3 ripe bananas, mashed
- 1/2 cup unsalted butter, melted (or 1/3 cup vegetable oil for a lighter version)
- 3/4 cup granulated sugar (or brown sugar for a richer flavor)
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 3/4 cups all-purpose flour
- Optional: 1/2 cup chopped nuts (walnuts or pecans), chocolate chips, or raisins
Instructions:
- Preheat Oven:
Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
- Mash Bananas:
In a large mixing bowl, mash the bananas until smooth.
- Mix Wet Ingredients:
Add the melted butter to the mashed bananas and stir until combined. Mix in the sugar, eggs, and vanilla extract.
- Add Dry Ingredients:
Sprinkle the baking soda and salt over the wet mixture. Gently stir in the flour until just combined. Avoid overmixing, as this can make the loaf dense.
- Fold in Add-Ins (Optional):
If using nuts, chocolate chips, or raisins, fold them into the batter.
- Bake:
Pour the batter into the prepared loaf pan and smooth the top. Bake for 55–65 minutes, or until a toothpick inserted into the center comes out clean.
- Cool and Serve:
Let the banana loaf cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely. Slice and enjoy!
Tips:
- Ripeness Matters: Use bananas with brown spots for the sweetest and best flavor.
- Customization: Add a pinch of cinnamon or nutmeg for a warm spice flavor.
- Storage: Wrap tightly in plastic wrap or store in an airtight container for up to 3 days at room temperature or up to a week in the refrigerator.
This versatile banana loaf is great on its own, toasted with butter, or paired with a cup of coffee or tea. Enjoy! 🍌🍞
