Banana Loaf Recipe

Ingredients:

  • 3 ripe bananas, mashed
  • 1/2 cup unsalted butter, melted (or 1/3 cup vegetable oil for a lighter version)
  • 3/4 cup granulated sugar (or brown sugar for a richer flavor)
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 3/4 cups all-purpose flour
  • Optional: 1/2 cup chopped nuts (walnuts or pecans), chocolate chips, or raisins

Instructions:

  1. Preheat Oven:
    Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
  2. Mash Bananas:
    In a large mixing bowl, mash the bananas until smooth.
  3. Mix Wet Ingredients:
    Add the melted butter to the mashed bananas and stir until combined. Mix in the sugar, eggs, and vanilla extract.
  4. Add Dry Ingredients:
    Sprinkle the baking soda and salt over the wet mixture. Gently stir in the flour until just combined. Avoid overmixing, as this can make the loaf dense.
  5. Fold in Add-Ins (Optional):
    If using nuts, chocolate chips, or raisins, fold them into the batter.
  6. Bake:
    Pour the batter into the prepared loaf pan and smooth the top. Bake for 55–65 minutes, or until a toothpick inserted into the center comes out clean.
  7. Cool and Serve:
    Let the banana loaf cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely. Slice and enjoy!

  • Ripeness Matters: Use bananas with brown spots for the sweetest and best flavor.
  • Customization: Add a pinch of cinnamon or nutmeg for a warm spice flavor.
  • Storage: Wrap tightly in plastic wrap or store in an airtight container for up to 3 days at room temperature or up to a week in the refrigerator.
