Ingredients

- 1 tsp sea salt

- 1 tbsp beef tallow or pork lard

Instructions
1. Prepare the Pork Belly
- Pat pork belly cubes dry with paper towels.
- Season with salt and black pepper.
- Heat a cast-iron skillet over medium-high heat and add tallow.
- Sear pork belly cubes for 4–5 minutes per side until deeply golden and crispy.
- Reduce heat to medium and cook another 10–15 minutes, turning occasionally, until tender inside.
2. Make the Creamy Pepper Sauce
- In a small saucepan, melt butter over medium heat.
- Add cream cheese and heavy cream.
- Stir until smooth and creamy.
- Mix in black pepper and salt.
- Simmer for 2–3 minutes until slightly thickened.
3. Serve
- Arrange crispy pork belly bites in a bowl.
- Add a generous scoop of creamy pepper sauce on the side.
- Garnish with chopped chives if desired.
