🍋 Mediterranean Garlic Lemon Herb Chicken 

A bright, aromatic chicken dish cooked with olive oil, garlic, herbs, and tomatoes — simple but bursting with flavor.


🌿 Ingredients (Serves 4)

Chicken:

  • 4 boneless, skinless chicken breasts

  • 2 tbsp olive oil

  • 1 tsp salt

  • ½ tsp black pepper

  • 1 tsp paprika

  • 1 tsp dried oregano

  • ½ tsp thyme

  • ½ tsp cumin

  • 4 garlic cloves, minced

  • Zest of 1 lemon

  • Juice of 1 lemon

Vegetables (optional but very Mediterranean):

  • 1 cup cherry tomatoes, halved

  • 1 small red onion, sliced

  • 1 bell pepper, sliced

  • 1 tbsp capers or olives (optional)

Finish:

  • 2 tbsp fresh parsley

  • Extra lemon slices

  • Optional: crumbled feta on top


👩‍🍳 Instructions

1. Prep the Chicken

  • Pat chicken breasts dry.

  • In a bowl, mix olive oil, salt, pepper, herbs, paprika, garlic, cumin, lemon zest, and lemon juice.

  • Coat the chicken well.

  • Marinate 15 minutes (or up to 8 hours if time allows).


2. Sear the Chicken

  • Heat a large skillet over medium-high heat.

  • Add a little olive oil.

  • Sear chicken breasts 4–5 minutes per side until golden.


3. Add Mediterranean Vegetables

Add to the skillet:

  • Cherry tomatoes

  • Onion

  • Bell pepper

  • Capers or olives

Cook 3–4 minutes until tomatoes soften and release juices.


4. Create the Sauce

  • Add ¼ cup water or chicken broth to the pan.

  • Cover and cook 8–10 minutes until chicken is cooked through (internal temp 165°F / 74°C).

The vegetables create a natural Mediterranean-style broth with lemon and herbs.


5. Finish & Serve

Sprinkle fresh parsley, add lemon slices, and top with feta if you like.

Serve with:

  • Rice

  • Couscous

  • Roasted potatoes

  • Greek salad

  • Grilled vegetables


💡 Tips

  • For super juicy chicken: butterfly the breasts or gently pound them to even thickness.

  • For richer flavor: add 1 tbsp sun-dried tomato oil.

  • For low-carb: serve with cauliflower rice or sautéed spinach.
