  • 1 large onion, thinly sliced
  • 3 cloves garlic, minced
  • 2 tbsp fresh rosemary, chopped
  • 1 tbsp fresh thyme leaves
  • 2 tbsp fresh parsley, chopped
  • 150g goat cheese or feta cheese, crumbled
  • 3 tbsp olive oil
  • Salt and black pepper to taste

Optional Cream Sauce

  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • 1 tsp Dijon mustard
  • Pinch of nutmeg

Instructions

Step 1: Prepare the Vegetables

  1. Wash and peel the sweet potatoes and beets.
  2. Slice all vegetables into thin, even rounds using a sharp knife or mandoline slicer.
  3. Pat dry with paper towels to remove excess moisture.

Step 2: Prepare the Baking Dish

  1. Preheat oven to 375°F (190°C).
  2. Lightly grease a large casserole dish with olive oil.
  3. Scatter sliced onions and garlic across the bottom.

Step 3: Make the Cream Mixture (Optional)

  1. In a bowl, whisk together cream, Parmesan cheese, Dijon mustard, and nutmeg.
  2. Season lightly with salt and pepper.

Step 4: Assemble the Gratin

  1. Arrange vegetables vertically in alternating rows:
    • Sweet potato
    • Potato
