These protein-packed cheesecake cups topped with fresh raspberries and chopped pistachios are a deliciously light dessert and can even work for breakfast or brunch!

Ingredients:
  • ▢1 cup non-fat cottage cheese
  • ▢1 tablespoon honey
  • ▢1/2 teaspoon vanilla extract
  • ▢2/3 cup fresh raspberries
  • ▢2 tablespoons finely chopped pistachios
Instructions:
  1. Add the cottage cheese, honey and vanilla to a food processor and purée until creamy and smooth.
  2. Divide mixture evenly between two dessert glasses or ramekins.
  3. Top with fresh raspberries and pistachios.
